HOW TO MAKE A MUG BROWNIE
Ingredients
- 3 tbsp unsweetened cocoa powder,
- 3 tbsp all-purpose flour (but a 1:1 gluten-free flour blend should be OK)
- 3 tbsp sugar
- pinch of salt
- 2 ½ tbsp veg oil,
- 3 tbsp milk,
- 1 tsp vanilla extract
- 2 tablespoons chocolate chips plus more for topping
- Microwave safe 12 oz. mug
cup = 8 oz.
tsp = teaspoon
tbsp = tablespoon
pinch of salt = roughly 1/16 to 1/8 of a tsp
Directions
- Mix in a microwave-safe mug the dry ingredients: sugar, flour, cocoa powder and salt
- Use a fork to stir until combined, and free of lumps.
- Stir in chocolate chips.
- Add the wet ingredients: oil, milk, and vanilla
- Stir with a spoon or fork until just combined (try not to over mix it).
- Sprinkle a few additional chocolate chips over the top
- Microwave for 60 seconds. Brownie will rise, if it still looks moist, cook in intervals of 10 seconds.
- Let your mug brownie stand for a few minutes before enjoying since it will be very hot!

Recipe Tips
- Use a 12 oz. mug, if possible, since it makes it easier to mix ingredients and the brownie mixture will not overflow the rim as it rises.
- Don’t over mix your ingredients, which can result in a tough brownie.
- Time will vary a bit based on the microwave and the size of mug. You may need to adjust the cooking time slightly, since every microwave and mug heats a little differently

Recipe Variations
- Add 1 tbsp raspberry jam to the brownie batter
- Add a tablespoon of chopped walnuts / pecans / hazelnut, or your favorite nut
- Add a tsp of expresso powder with the dry ingredients
- Substitute soy milk if lactose intolerant
- Substitute Semi-Sweet/Dark Chocolate Chips: Often dairy-free but check ingredients if lactose intolerant (Milk Chocolate Chips: Always contain milk solids or dairy fats.)
- Substitute 2 ½ olive oil or butter for the 2 ½ tbsp veg oil
