HOW TO MAKE CLASSIC OVERNIGHT OATS
Ingredients
- ½ cup rolled oats
- ½ cup milk (any kind whether dairy – full fat, 2% or low-fat or soy milk)
- 1 teaspoon honey (optional)
Directions
- Add the oats, milk, and the optional honey to a jar or container. We like to use a 16 oz (1 pint) mason jar with a lid or one of comparable size. A 16 oz.jar gives you enough room to mix, chill, and add toppings without spilling. If you use 8 oz mason jars they will be filled almost all the way to the top limiting the amount of topping you can add.
- Slowly pour milk over the oats, giving it time to fill in the spaces between the oats. Be sure that the oats are just barely covered with milk.
- Stir until everything is combined and the oats are fully soaked.
- Cover and place in the refrigerator at least 2-4 hours. However overnight is better. Sitting in the fridge allows the raw, rolled oats to fully absorb the liquid, breaking down starches for a soft, creamy, porridge-like texture without cooking.
- In the morning, give the mixture a stir, add a topping, and grab a spoon.
That’s it! There is no cooking, no stress.

- Vegan option: Use your favorite non-dairy milk, vegan yogurt, and a sweetener like maple syrup.
- Gluten Allergy/Celiac option: Oats naturally don’t have gluten, but are frequently cross-contaminated with wheat, barley, or rye during farming and processing. People with celiac disease or severe gluten sensitivity should only consume oats specifically labeled “certified gluten-free” or “purity protocol”to ensure safety

For a balanced consistency, try replacing about one-third of the milk with yogurt, whisking them together before adding to the oats.

- A good starting point is an equal ratio of oats to liquid (1:1), and you can gently adjust from there to match the texture that feels best for you.
- Overnight oats can be stored in the fridge for up to 5 days so you can make a large batch. If you decide to make 5 days’ worth of the recipe, you will need 5 mason jars and 2 ½ cups of oats and milk with 5 teaspoons of honey (if using).

- Lemon zest is the grated yellow outer skin of a lemon, not the white pith underneath. The white pith tastes bitter.
- It adds concentrated lemon flavor to dishes without adding liquid like juice does, so it is ideal for baking and for finishing savory dishes.
How to make lemon zest (with a microplane/zester)
- Wash and dry the lemon well; if you like, briefly soak in water with a little baking soda, then rinse, to remove any residue.
- Hold the lemon in one hand and a microplane or fine grater in the other, with the sharp side against the peel.
- Lightly scrape the lemon across the grater, rotating the fruit so you remove only the yellow layer in thin shavings.
- Stop as soon as you see the white pith and move to a new spot; collect the fine shreds of zest from the back of the grater and measure for your recipe.
